Bar Oso

After a day on the mountain or exploring Whistler Village, nothing satisfies like Bar Oso’s beloved Oso Sour – a cocktail that celebrates Canadian favourites like bourbon, bacon, and maple. The result is a sweet, salty, sour and lightly herbaceous libation topped with the most addictive garnish of all time. Now, between visits to the village, you can curb your cravings with an Oso Sour from your very own home bar. Salud!

BACON INFUSED BOURBON

  • 5 strips smoked streaky bacon
  • 1 bottle Old Grandad Bourbon

Cook bacon in a pan or skillet for 1 minute and add it to a 1 liter glass container, making sure to include all of the fat. Pour in the bottle of bourbon and stir. Keep at room temperature for three hours and then refrigerate until the fat separates. Strain through a coffee filter and reserve the liquid. Store in the fridge for up to two weeks.

MAPLE CANDIED BACON

  • 1 package smoked streaky bacon
  • 8 oz maple syrup
  • 2 oz sherry vinegar
  • 1 cup Demerara sugar
  • Pinch cracked black pepper

Combine all ingredients except the bacon and stir. Place bacon on a tray and cook at 310⁰F for six minutes. Flip and cook for 5 minutes. Flip, baste with mixture, and cook for five minutes on each side twice, until bacon is crispy but not burnt. Cool and store in the fridge in a glass container.

OSO SOUR

Serves 1

  • 1.5 oz bacon infused bourbon
  • .5 oz green Chartreuse
  • .5 oz maple syrup
  • 1 oz fresh lemon juice
  • 1 oz egg whites
  • 1 piece Maple candied bacon

Combine all ingredients except for bacon in a shaker tin and dry shake (no ice) for five to ten seconds. Add ice to the tin and shake for an additional five to ten seconds. Add a large ice cube to a chilled rocks glass and double strain your cocktail into the glass. Garnish with maple candied bacon. Close your eyes, take a sip, and enjoy your happy place.
