CinCin – Thierry Busset’s All-Fruit Dessert Selections Sing to the Virtues of Summer

Vancouver, BC – Chef Patissier Thierry Busset transforms the summer’s fresh fruit into the sublime with CinCin’s new all-fruit dessert menu. Showcasing picked-to-perfection fruit from the Fraser Valley and Okanagan, the seasonal menu articulates the summer’s vibrant flavours, including strawberries, raspberries, peaches, blueberries, and cherries.

“Summer is the perfect time for light, refreshing desserts,” says Busset. “I use the freshest fruit available each season and we are lucky to have so many possibilities right in our own backyard.”

Some of the new selections include:

* Roasted cherries in olive oil with raspberry coulis and Tahitian vanilla
ice cream

* Strawberry Trio: strawberry sablé, strawberry sorbet, chilled strawberry
and basil soup

* Raspberry cocktail: fresh raspberries, lime sabayon and coconut sorbet

* Peach and blueberry cake served with apricot sorbet and raspberry coulis

* All sorbets and ice creams are house-made daily by the Chef

Applying his classical French training, Busset enjoys creating desserts with balanced flavours and intriguing textural contrasts. Born in Auvergne, France, Busset refined the art of classic pastry making in some of the world’s best restaurants, including France’s two-star Michelin L’Auberge du Pere Bise, London’s Le Gavroche and ‘The Restaurant’ in the Hyde Park Hotel, which was awarded its third Michelin Star during his tenure.

Making Vancouver his home in 2000, Busset opened CinCin’s acclaimed sister restaurant, West. Now the Chef Patissier at CinCin, Busset is known as the “angel of the kitchen” for his all-white apparel and simply heavenly desserts.

Located in the heart of Robson street, the city’s most fashionable and vibrant shopping district, CinCin offers contemporary Italian inspired cuisine crafted from the open wood-fired kitchen.
